Previously all cheese was in the meat department by the sausage, except cream cheese or other small pre-packaged cheese which were with the milk. The new dairy department had an open dairy case. “People couldn't feature how you could leave a case open refrigerated and not have to close the doors on it.... For about the first year, I'd stand around explaining to people how the air flowed around...and would keep it cold.” Top of case had cheese, butter, margarine; bottom had milk, eggs, cottage cheese, etc.
